  1. In a medium bowl, whisk together eggs, vanilla, coconut sugar, honey, stevia and applesauce.
  2. Stir in finely shredded zucchini.
  3. In a separate bowl, mix flour, cocoa powder, soda, cinnamon and salt.
  4. Fold dry mixture into wet mixture.
  5. Pour into a 9 x 9 pan lined with parchment paper.
  6. Bake at 350 degrees for 30 – 35 minutes.
  7. Sprinkle mini chocolate chips on top when brownies are still hot. This helps them to adhere to the brownies. Or, you can spread them around to cover the brownies.
