Instructions
Cashew Sauce
  1. Cover cashews in extra water and let soak for 2 hours.
  2. Drain Cashews and place in a blender.
  3. Add water, salt, garlic and parmesan (optional).
  4. Blend until smooth (about 1 minute).
  5. For added kick you can add your favorite hot sauce to taste.
Sweet Potato Noodles with Spinach
  1. Melt coconut oil in a medium size skillet.
  2. Add sweet potatoes and saute about 6 minutes or until tender-crisp.
  3. Add enough cashew sauce to coat evenly.
  4. Toss in spinach and cook until wilted.
  5. Optional: You can top with caramelized onions, sauteed mushrooms, fresh basil, or parmesan cheese.
