Fajitas with Sweet Bell Peppers and Onions

Ingredients
Instructions
  1. Preheat oven to 350 degrees.
  2. In a bowl, combine olive oil, lime juice, chili powder, cumin, red pepper flakes and minced garlic.
  3. Slice meat into thin strips and place in the bowl with the above mixture.
  4. While meat is marinating, prepare peppers, onion, cilantro, and tomatoes.
  5. In a pan cook meat slices on medium to high heat until tender, about 5 minutes.
  6. Add peppers, and onions, Continue to cook about 4 more minutes, (Do not overcook or peppers will lose their color.)
  7. Add cilantro and tomatoes and continue to cook about 1 more minute just to heat tomatoes.
  8. Place tortillas on an oven proof plate and cover with parchment paper or another plate. Heat in oven about 3 minutes.
  9. Divide meat mixture between the tortillas and roll up to serve.
