Instructions
  1. Preheat oven to 425.
  2. Cut butternut squash in half and place cut side up in a baking dish.
  3. Mix remaining ingredients (excluding vegetable broth) in a bowl.
  4. Brush mixture onto butternut squash.
  5. Bake 50 minutes (or until tender). Remove from oven and cool to room temp.
  6. Scrape squash into a blender or food processor.
  7. Pour in vegetable broth and puree.
  8. Reheat in a pan and delight yourself in it’s rich and creamy deliciousness!
