Green Peppers Stuffed with Red Rice and Beans

Instructions
Rice
  1. Preheat oven to 350 degrees F.
  2. Cook rice on a stovetop according to the directions on the bag of rice, but use vegetable stock in place of water. Optional: For an easier recipe replace uncooked rice from a bag with a healthy boxed rice, I like Far East.
  3. While rice is cooking fill a baking dish with 1/2 inch of water and begin preparing the Bell Peppers.
Bell Peppers
  1. Bring a large pan of water to a boil.
  2. Remove tops of green peppers.
  3. Boil peppers for approximately 5 minutes, remove, and let stand on a dry towel.
Filling
  1. Saute onion and garlic in a pan with olive oil.
  2. Add cooked rice, beans, green chilies, and tomato paste. Season with salt and pepper.
Assembly
  1. Place green peppers open side up in the baking dish containing 1/2 inch of water. .
  2. Fill with bean and rice mixture.
  3. Bake at 350 for approximately 30 minutes.
  4. Garnish with chopped green onion and fresh tomatoes.

Vegetable Stock: varies depending on how it’s made, but it contains whatever health nutrients are contained in the veggies and herbs used (look at label or make you own). Either way it helps boost my immune system to fight disease.
