Ingredients

Roasted Red Pepper Sauce
Instructions
Roasted Red Pepper Sauce
  1. Melt coconut oil in a pan.
  2. Add onion and garlic to the pan.
  3. Cook about 4 minutes or until onions are soft.
  4. Add roasted red peppers and cook 2 more minutes
  5. Add cayenne pepper and basil.
  6. Transfer to a blender, add vegetable broth and puree until creamy.
  7. Return to the pan and continue heating.
  8. Add cream (optional) and 1/2 c of parmesan to the sauce and cook 1 more minute.
  9. Season with salt and pepper to taste.
  10. Let warm while you make spiralized veggies.
Spiralized Veggies
  1. Use a spiralizer to spiralize squash and zucchini.
  2. Melt 1 Tbsp of coconut oil in a pan.
  3. Add veggies and garlic.
  4. Season with salt and pepper and cook until warm, about 1 minute.
  5. Coat veggies with sauce or place veggies on plates and cover with sauce.
  6. Garnish with chopped basil and extra parmesan (optional).
