  1. Chop all ingredients as indicated and place in a large bowl. Drizzle with olive oil. Season with salt and pepper. Roast at 450 for 20 to 30 minutes.
  2. Increase, decrease, or eliminate any vegetable according to taste. It doesn’t have to be exact.
