Instructions
  1. In a large bowl combine oil, garlic cloves, and italian seasoning. (You can use any dried seasoning you prefer)
  2. Slice veggies and toss with the oil mix in the bowl.
  3. Spread evenly (in one layer) on a baking sheet lined with parchment paper.
  4. Top with parmesan cheese and season with salt and pepper.
  5. Roast at 425 degrees for 25 minutes.
  6. Top with basil if desired and cook 2 more minutes.
  7. It’s that easy! But oh so good!
