Instructions
  1. Bake sweet potato in oven or microwave.
  2. Mash sweet potato and stir in 2 teaspoons of butter or coconut oil. Divide onto two plates.
  3. Cook bacon according to package directions. Crumble into bite size pieces.
  4. Fry eggs in coconut oil. Season with salt and pepper. Place on top of sweet potato.
  5. Sprinkle bacon on top of egg and sweet potato.
  6. It’s that easy! Enjoy!
  7. Hint: Leave yolk runny so it adds moisture to the dish.
