Instructions
  1. Prepare veggies and garlic as noted.
  2. Heat olive oil in skillet.
  3. Add garlic, mushrooms and onions. Cook until caramelized.
  4. Add balsamic vinegar and cook about 2 more minutes.
  5. Add tomatoes and continue cooking until tender (about 2 minutes).
  6. Add zucchini and summer squash and cook until desired tenderness.
  7. Top with basil. Cook 1 minute then top with Parmesan cheese and serve.
