Here’s a brief summary of my journey:
Within just 4 months of dietary changes, I was cured of life-long allergies, joint pains, foggy brain, and fatigue. Due to the obvious change in my health, close friends began asking me what I had done to experience such a transformation in the way I felt. Shortly afterward, they asked if I would write it down for them. This resulted in my writing a book and soon I was teaching seminars about “Eating with Purpose.”
If you want to receive all of the information in one place, you may want to order “Eating with Purpose”. This book is a compilation of the notes that I took while reading the materials listed on the resource page of this website. As I read these books, I discovered that not all nutritionists and doctors agree on every issue concerning what we should and should not eat. So I spent several months trying to sort out what might be a general consensus. At the same time, I discovered that God put specific nutrients in food that were meant for our health and our healing. Therefore, I restricted inclusion in the book to the following:
- Information that I felt did not contradict scripture.
- Information about which there was a general consensus among the authors I read.
- Instructions I could reasonably follow without having to find some unusual food item.
In this book, which I use for teaching my seminar, I include an easy to follow plan for improving eating habits along with easy to read charts like the following:
- How Poor Eating Habits Can Lead to Disease
- Divine Health and Healing in Everyday Foods
- The Power of Antioxidants
- Cooking with Herbs and Spices
- Health Benefits of Essential Oils
- Cooking Healthy Made Easy
- A Seven Day Menu Plan with Recipes and a Shopping Guide.
My personal motto soon became: Keep it Healthy, Keep it Simple, Keep it Delicious
I gave these notes to my family so they would not have to spend the same amount of time doing their own research. We all wanted to change our eating habits and be in better health. As other people noticed a difference in our health, they began asking me for a copy of my notes. I put the notes into my own words and formatted them into easy to read charts. This book, “Eating with Purpose” is available on the store page.
As the book spread in popularity, I was soon asked to teach seminars about my journey. In the seminar I teach general information about the health benefits God created in food for the nourishment of our bodies. I encourage people to take their own personal notes as they read my book, subscribe to my website, and develop their own plan under the advice of their healthcare professional. I also suggest that they do their best to find a doctor who has a thorough understanding of nutrition.

Comments from gracious hosts who have invited me to speak to their church:
What a joy to hear Vicki share her testimony and life decisions concerning health and eating wisely. Her approach was simple, faith-building, and easy for others to understand and engage as new habits in their life. Her love for Christ, for others, and for the body of Christ to live well is very evident. She is a good communicator and handles her audience with clarity and purpose. Your groups will enjoy this time of teaching and be encouraged to live healthy so the gospel and glory of Christ will be revealed in their lives.

I began a journey of weight loss several years ago without an understanding of food and its importance for a healthy body. After attending the Health Seminar with Vicki, food became my friend instead of my enemy. This has changed EVERYTHING for me. I now embrace God’s plan for me and my family to be healthy and happy. Vicki presents her case for living life to its fullest through diet in a very practical, upbeat, easy to understand manner. The women of our church were inspired by sitting under Vicki’s teaching, and are on the path to leading their families into wholeness: body, soul and spirit.

What My Cure is not:
Disclaimer: “My Cure” is not a recommendation for what other people should eat. It is exactly as it says, It is MY cure: what I ate to achieve better health for myself. I am not a nutritionist or a doctor. This site is not intended to be used as medical advice and you should always consult your healthcare provider concerning health decisions. The information concerning the healthy components that God created in food is intended for informational purposes only.
By subscribing to this site you acknowledge that you are responsible for your own health decisions. What worked for me may not work for you. There are other factors which must also be taken into consideration such as genetics, exercise and environmental issues which affect our health. These, along with spiritual inspirations, will be discussed in my soon coming blog, “Beyond Food”.
