Instructions
  1. Prepare rice according to directions on the box. I use Near East Rice Pilaf (original).
  2. While rice is cooking heat oil in a large pan.
  3. Brown chicken in oil with onions and garlic.
  4. Remove chicken from pan when browned.
  5. In the same pan saute spinach and sun-dried tomatoes until spinach is done.
  6. Return chicken to the pan.
  7. Add feta, cover and cook about 1 more minute.
  8. Drizzle with lemon juice (optional).
  9. Serve chicken mixture on top of the rice.
