Can you think of anything healthier than sweet potatoes and spinach combined. Top it off with cashew sauce and you have a home run! All three of these ingredients combined make a savory deliciousness that makes your taste buds say, “Thanks for the love and comfort!” And you can keep it simple or add some variety. Best of all, it’s a great replacement for fettucini alfredo and much healthier! No more guilt!
Another thing I like about this recipe is that you can serve it as a side dish with some chicken, or serve it as the main dish with a salad. But it also comes with a warning! You’ll want to drink the cashew sauce!
And here’s a great idea: make some extra and use it later in the week over baked chicken or mashed potatoes.
Optional ideas to consider: Add your favorite hot sauce for an added kick! You can also boost the flavor of this sweet potato dish with some caramelized onions or sauteed mushrooms. I didn’t include these in the recipe pictured because it’s delicious even when made simple and I always try to leave it as easy as possible for first time users.
But if you like super savory, and don’t mind the extra effort, by all means add any flavor you wish and enjoy!
- 1 cup cashews
- 3/4 cup water
- 1/2 tsp salt
- 2 cloves garlic
- 1/4 cup parmesan cheese shredded (optional)
- 1 tbsp oil (I prefer coconut)
- 2 medium sweet potatoes spiralized
- 2 cups fresh spinach
- salt and pepper
- Cover cashews in extra water and let soak for 2 hours.
- Drain Cashews and place in a blender.
- Add water, salt, garlic and parmesan (optional).
- Blend until smooth (about 1 minute).
- For added kick you can add your favorite hot sauce to taste.
- Melt coconut oil in a medium size skillet.
- Add sweet potatoes and saute about 6 minutes or until tender-crisp.
- Add enough cashew sauce to coat evenly.
- Toss in spinach and cook until wilted.
- Optional: You can top with caramelized onions, sauteed mushrooms, fresh basil, or parmesan cheese.
