I love this dessert because it has more taste than any other ice cream I’ve ever made, it’s handy, inexpensive, and the health benefits are amazing!
Freezing the ice cream in individual serving cups makes this dessert or snack handy for the kiddos. And you can feel good about making it for their health!
- 2 Tbsp greek yogurt (i use unflavored, organic)
- 1/2 tsp pure vanilla extract
- 2 bananas sliced
- 3/4 c frozen fruit cut into small pieces
- Place yogurt, vanilla and bananas in a blender.
- Blend on high speed until smooth. Add more yogurt if needed.
- Add frozen fruit a little at a time for easier blending.
- Pour into individual serving cups and freeze about1 hour, or until desired consistency. That is of course, unless you just can't resist eating one right now! In that case, go ahead and enjoy this creamy goodness!
- Stir before serving. And if they have become hardened in the freezer, just set the container in hot , but not boiling water for about 1 minute. Or, if you don't mind using a microwave, heat them for about 30 seconds and then stir.
- Optional: Pour a packet of unflavored probiotics into the mix for boosting your immune system and defense against colds and flu. (Consult your health care provider concerning probiotics for children.)
