Instructions
  1. Preheat oven to 400 and line a baking sheet with parchment paper.
  2. Blanch the broccoli for 1 minute. Drain and pat dry with a paper towel.
  3. (If using chopped spinach it will need to be precooked and drained. If using zucchini, you will need to grate it and squeeze all of the water out of it with a paper towel).
  4. Mix veggie of your choice with the next 6 ingredients.
  5. Add breadcrumbs last.
  6. Place the mixture in fridge for about 15 minutes to firm up.
  7. Roll into balls and place on baking sheet.
  8. Mist the tops with butter spray and bake for 10 minutes.
  9. Turn, spray again, and bake for another 10 minutes.
  10. Remove and season again with salt if needed. Or try a little seasoning salt.
