Every time I take this salad with dill and cilantro dressing to a gathering, I always get asked for the recipe.
It quickly becomes everyone’s favorite! I know it became my favorite when it was given to me by a friend we worked with in Moscow, Russia. The dressing is so good, I always make extra and use it on and a variety salad greens with nuts, or just pour over tomatoes!
- 1/2 yellow and orange bell peppers cut into bite size pieces
- 1 pint cherry tomatoes cut in half
- 1/2 cucumber cut into 1/4 slices
- 2 slices purple onion cut into small pieces
- 1/2 lb feta cheese crumbled
- 1/4 c black olives sliced
- 2 tablespoons red wine vinegar
- 1 tablespoon sugar I use raw sugar, or stevia equivalent
- 3 tablespoons olive oil extra virgin, cold pressed
- 1 small garlic clove chopped
- 1 teaspoon dijon mustard
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried cilantro
- 1/4 teaspoon italian seasoning
- Gather all ingredients.
- Cut veggies and place in a bowl.
- Add feta and olives.
- Season with salt and pepper.
- Pour vinegar into a small bowl.
- Add sweetner.
- Whisk oil into vinegar and sugar mixture to emulsify.
- Stir in remaining ingredients.
- Season with salt and pepper.
- Pour over salad right before serving.
- Enjoy one of the tastiest salads you will ever eat!
