I have always used store bought enchilada sauce when making my own enchilada recipe. However, after making my own sauce, I found out how easy it is! Now, I can’t imagine ever spending the money again. And the fresh sauce is so much better!
Easy Tip: I freeze the leftover sauce in a baggie, labeled and dated. Make sure to squeeze out as much air as possible.

- 1 28oz can whole peeled tomatoes
- 3 Tbsp chili powder
- 1 Tbsp ground cumin
- 1 half onion chopped
- 1/2 tsp salt
- 1/4 c fresh cilantro chopped (optional)
- 3 cloves garlic
- Place everything in a blender and blend for 1 minute or until combined! It's that easy!
