  1. Melt coconut oil in dutch oven on medium heat.
  2. Add onion and beef stew meat (or steak cut into chunks).
  3. Season with salt and pepper and cook about 20 minutes or until meat is tender.
  4. Add broth, tomato juice, diced tomatoes, potatoes, chili powder and cumin. Continue cooking about 5 minutes or until potatoes are tender.
  5. Add vegetables and cook just until heated through so they don’t lose their vibrant color!
