Summer squash isn’t really bursting with flavor and for that reason it has not always been a favorite of mine. But when you pair summer squash with garlic and parmesan it becomes filled with savory nourishment even for the pickiest of taste buds. How do I know? Our son came over, took one bite and said, “I think I’ve just found my newest favorite vegetable!”
And with all of the health benefits of this recipe, every mother can feel good about making it for their family. By the way, did I mention it is really ease to make?
In fact, the first time I made it I was just experimenting and tossing in the ingredients. It was such a hit I had to come up with the measurements so I could include it on my website.
However, don’t feel like you have to measure everything exactly. That just stresses me out. Get close, toss it in, taste it, and adjust by adding a little more to taste. Have fun! Enjoy cooking! If it doesn’t turn out just right the first time, explain to the family and try again another night.

- 4 Tbsp butter
- 4-5 medium yellow summer squash cut into 1/4 inch slices
- 1 large garlic clove minced
- 1/2 medium onion sliced but chopped is fine
- 1/2 c parmesan cheese freshly grated
- 3 sprigs basil chopped (optional for garnish)
- Melt butter in pan.
- Add yellow squash, garlic and onions.
- Saute until tender.
- Add parmesan cheese. Continue cooking until mostly melted.
- Garnish with basil and additional parm if desired
