Rich and creamy butternut squash soup with garlic and basil is comfort food at it’s finest. Although it may take some time to roast, your cooking time is short and the recipe is easy.
- 1 large butternut squash cut in half
- 2 Tbsp olive oil
- 1/4 c onion chopped
- 6 sage leaves chopped
- 3 garlic cloves minced
- 1 tsp salt
- 1/4 tsp pepper
- 1 1/2 c vegetable broth
- Preheat oven to 425.
- Cut butternut squash in half and place cut side up in a baking dish.
- Mix remaining ingredients (excluding vegetable broth) in a bowl.
- Brush mixture onto butternut squash.
- Bake 50 minutes (or until tender). Remove from oven and cool to room temp.
- Scrape squash into a blender or food processor.
- Pour in vegetable broth and puree.
- Reheat in a pan and delight yourself in it's rich and creamy deliciousness!
