This is one of my easy “go to” recipes when I want something tasty but I can throw it together in a hurry without having to really measure anything. And I love the way it’s so appealing to the eyes with it’s bright colors.
A friend of my made this for her 9 and 10 year old sons – they never wanted canned green beans ever again! They loved the taste of these healthy vegetables, alive with great nutrition!
- 2 Tbsp coconut oil extra virgin, cold pressed
- 1 12 oz bag of whole green beans
- 1/2 red bell pepper sliced
- 1/2 yellow bell pepper sliced
- 1/2 orange bell pepper sliced
- 1 Tbsp sesame seeds
- Slice bell peppers.
- Toast sesame seeds in a pan and remove.
- Heat oil in the same pan.
- Add green beans and bell peppers.
- Season with salt and pepper.
- Cook about 10 minutes until hot but still crispy.
- Sprinkle with sesame seeds.
- Note: For your convenience, keep a frozen bell pepper medley on hand to use in place of fresh.
