This recipe is a makeover from my growing up days. It tastes fresh and hearty all at the same time.
And with the mix of beans an rice it supplies you with a complete protein. It’s also great to take to work for a quick warm up.
These are easy to make ahead the night before and just pop into the oven when it’s time for dinner.
- 4 med green bell peppers
- 1 c brown rice uncooked
- 1 32 oz box of vegetable stock
- 1 tsp olive oil extra virgin
- 1 small onion chopped
- 2 garlic cloves chopped
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 can black beans drained and rinsed
- 4.5 oz can green chillis chopped (optional)
- 4 Tbsp tomato paste
- Preheat oven to 350 degrees F.
- Cook rice on a stovetop according to the directions on the bag of rice, but use vegetable stock in place of water. Optional: For an easier recipe replace uncooked rice from a bag with a healthy boxed rice, I like Far East.
- While rice is cooking fill a baking dish with 1/2 inch of water and begin preparing the Bell Peppers.
- Bring a large pan of water to a boil.
- Remove tops of green peppers.
- Boil peppers for approximately 5 minutes, remove, and let stand on a dry towel.
- Saute onion and garlic in a pan with olive oil.
- Add cooked rice, beans, green chilies, and tomato paste. Season with salt and pepper.
- Place green peppers open side up in the baking dish containing 1/2 inch of water. .
- Fill with bean and rice mixture.
- Bake at 350 for approximately 30 minutes.
- Garnish with chopped green onion and fresh tomatoes.

Beans: high in antioxidants to fight diseases like diabetes, heart disease and cancer. Also high in fiber and help with weight loss.
Vegetable Stock: varies depending on how it's made, but it contains whatever health nutrients are contained in the veggies and herbs used (look at label or make you own). Either way it helps boost my immune system to fight disease.
Onions: improve immunity, fight infection, regulate blood sugar, reduces inflammation, fight allergies.
Tomatoes: interfere with chemical unions needed to create carcinogens. Heart health. Regulate fat in the blood.
