Pairing up Sweet Peppers with Asparagus with brighten up any meal; with color as well as a great healthy taste sure to wow any crowd!
This is one of my favorite meals. I prep and my husband grills. Less work and we both enjoy it! Life is good!
- 3 large sweet bell peppers red, orange, and yellow
- 1 bunch of asparagus fresh
- 4 green onions chopped
- 2 medium garlic cloves chopped
- 2 Tbsp olive oil
- Slice sweet peppers.
- Cut thick ends off of asparagus.
- Chop onions and garlic.
- Pour olive oil into a large bowl.
- Add onions, garlic, and vegetables. Toss.
- Season with salt and pepper
- Grill about 4 minutes on each side.
- Serve arranged on a plate or in a bowl.
