- 1 large sweet potato sliced
- 1 Tbsp coconut oil melted
- 1 Tbsp butter melted
- 1/4 tsp italian seasoning
- 1 Tbsp parmesan cheese shredded
- Line muffin tins with coconut oil.
- Thinly slice sweet potato.
- Melt coconut oil and butter.
- Whisk cheese and seasoning into the oil and butter.
- Toss sliced sweet potato with the oil mixture.
- Layer sweet potatoes in muffin tins.
- Bake 375 for 45 min.
- Makes four stacks. Eat with a fork or just peel apart as an easy lunch snack.
