Mandarin orange salad is not only refreshing and delicious, it’s easy to make. And who doesn’t like easy?
Ingredients
Salad
- 2 c mixed salad greens
- 1/4 c sliced almonds toasted
- 1/3 c mandarin oranges in juice, not in syrup
Dressing
- 2 Tbsp apple cider vinegar I prefer Braggs
- 3 Tbsp vegetable oil
- 1 1/2 tsp red wine vinegar
- 1 1/2 Tbsp orange juice concentrate unsweetened if available, or use fresh squeezed
- 1 1/2 tsp green onions chopped
- 1 Tbsp raw or coconut sugar or sweeten with Stevia

Instructions
Salad
- Place mixed greens in a bowl.
- Lightly toast almonds in a pan on low heat (until golden).
- Top mixed greens with oranges.
- Sprinkle almonds on salad.
Dressing
- Whisk the first four ingredients together in a small bowl, or place in a small jar and shake.
- Chop green onions and add to dressing mixture.
- Pour dressing over salad when ready to serve, or serve on the side.
- Optional: top with chicken strips for a complete meal.
