Roasted Broccoli with Parmesan and Garlic

  1. Preheat oven to 425 degrees.
  2. Place Florets in a bowl and sprinkle with garlic, olive oil, salt and pepper. Toss.
  3. Layer evenly onto a large cooking sheet (covered with parchment paper) and roast about 20-25 minutes.
  4. While broccoli is roasting, toast pine nuts in a pan.
  5. Juice lemon and prepare lemon zest.
  6. About 2 minutes before broccoli is done, sprinkle with pine nuts, lemon juice, lemon zest, parmesan cheese, and fresh basil (optional). Toss lightly with a spatula.
  7. Heat about 2 more minutes or until parmesan is slightly melted.
  8. Remove from oven.
