Spiralized veggies are a wonderful low cal and tasty alternative to spaghetti noodles. They are full of flavor, greatly increase the health benefits of the dish and add beautiful color to impress your guests!
Add creamy roasted red pepper sauce and you not only power pack the dish with healthy benefits but the taste is deliciousness at its best!
I made this recipe for just my husband and I and reduced the spiralized squash and zucchini to one each. I freeze the extra sauce and drizzle it over fish or chicken on another night It’s great over my salmon patty recipe, Or, I use it when we have spiralized veggies again. Nothing like making it easy on yourself!.
Just to let you know, it does contain heavy cream which some people may consider very unhealthy, but you’ll be surprised when you read the healthy benefits at the end of the recipe. However, you may want to add a little more parmesan cheese.
If you are not familiar with what a spiralizer is, I have included two examples below. Just know that they can vary greatly in price. And the less expensive ones may not slice as easily as the more expensive ones. However, if you are using it for yourself, or you just want to try it out, the less expensive one may work for you just fine.
The one I used for the above picture was less than $10.00. I had to manually separate some of the noodles after using the tool but it wasn’t a huge inconvenience. Here are some examples from Amazon:

- 2 large zucchini sauash spiralized
- 2 large summer squash spiralized
- 1 Tbsp coconut oil
- 1 large garlic clove minced
- 2 Tbsp coconut oil
- 1/2 large onion diced
- 2 large garlic cloves minced
- 1 15 oz jar roasted red peppers chopped or roast your own
- 1/8 - 1/4 tsp cayenne peppr depending on your taste
- 2 Tbsp fresh basil finely chopped
- 3/4 c vegetable broth
- 1/3 c heavy cream optional
- 3/4 c parmesan cheese finely shredded
- Melt coconut oil in a pan.
- Add onion and garlic to the pan.
- Cook about 4 minutes or until onions are soft.
- Add roasted red peppers and cook 2 more minutes
- Add cayenne pepper and basil.
- Transfer to a blender, add vegetable broth and puree until creamy.
- Return to the pan and continue heating.
- Add cream (optional) and 1/2 c of parmesan to the sauce and cook 1 more minute.
- Season with salt and pepper to taste.
- Let warm while you make spiralized veggies.
- Use a spiralizer to spiralize squash and zucchini.
- Melt 1 Tbsp of coconut oil in a pan.
- Add veggies and garlic.
- Season with salt and pepper and cook until warm, about 1 minute.
- Coat veggies with sauce or place veggies on plates and cover with sauce.
- Garnish with chopped basil and extra parmesan (optional).
