Roasted zucchini and summer squash are a great pair with tomatoes! Paired with parmesan and garlic, you have nearly everything delicious from Italian Cuisine! (Except the pasta of course.)
Whether you serve this recipe straight from the baking dish, or transfer it to a platter, it is sure to have visual appeal for your guests. (Serve with additional parmesan after baking if desired)
Additional Benefit:
One of the things I really like about this recipe is that it requires only one bowl and one baking dish fro prep. That means easy cleanup for the person washing dishes. Which in my family would be my husband. I am blessed!
- 2 Tbsp coconut or olive oil
- 2 large garlic cloves minced (or 1 tsp from a jar)
- 1/2 tsp italian seasoning (optional)
- 1 medium zucchini sliced (1/2 inch slices)
- 1 medium yellow squash sliced (1/2 inch slices)
- 15 cherry tomatoes sliced in half
- 3/4 c parmesan cheese shredded
- 3 leaves fresh basil for garnish (optional)
- In a large bowl combine oil, garlic cloves, and italian seasoning. (You can use any dried seasoning you prefer)
- Slice veggies and toss with the oil mix in the bowl.
- Spread evenly (in one layer) on a baking sheet lined with parchment paper.
- Top with parmesan cheese and season with salt and pepper.
- Roast at 425 degrees for 25 minutes.
- Top with basil if desired and cook 2 more minutes.
- It's that easy! But oh so good!
God-given health benefits I enjoy from these healthy ingredients:
Garlic: detoxes the body and may boost immune function, lower blood pressure, and fight colds and flu.
Italian seasoning: may act as an antibacterial with antioxidants, contribute to healthy digestion, reduce stress, detox cells.
Summer Squash: may help support your immune system, contains antioxidant that help protect your cells from pollutants, and may help prevent anemia.
Zucchini: may aid in eye health, weight loss, metabolize cholesterol, prevent sclerosis, and aid with health of nerve cells and bones.
Parmesan cheese: protein which may aid in skin, muscle, teeth and bone health, and may aid cell repair.
Basil: may reduce stress, detox cells, and act as an antibacterial.
