Roasted Red Pepper Sauce
Instructions
Salmon Patties
  1. Mix all ingredients for salmon patties together in a bowl (except coconut oil)
  2. Heat coconut oil in pan.
  3. Let salmon patties rest for about 10 minutes while they firm up. (While they are resting, make roasted red pepper sauce and let sauce warm while you cook the salmon patties.)
  4. Cook salmon patties in another pan on both sides until golden (about 4 minutes each side).
  5. Drizzle with roasted red pepper sauce.
Roasted Red Pepper Sauce
  1. Melt 2 Tbsp coconut oil in a pan.
  2. Add onions and garlic to the pan.
  3. Cook about 4 minutes or until onions are soft.
  4. Add roasted red peppers and cook 2 more minutes.
  5. Add cayenne pepper and basil.
  6. Transfer to a blender, add vegetable broth and puree until creamy.
  7. Return to the pan and continue heating.
  8. Add cream (optional) and 1/2 c of parmesan to the sauce.
