Nothing like an all-in-one spaghetti and lasagna. Especially when the noodles are made from spaghetti squash so you know it healthy and good for your waistline. And to top it all off – it’s easy! Who doesn’t like easy?
The other thing that’s great about this recipe is that it’s fun to make with the kids. Each one can build their own boat!
- 1 medium spaghetti squash
- 1 lb ground meat I used ground turkey
- 1 24 oz jar of spaghetti sauce I like Bertolli organic
- 1 c mozarella cheese shredded
- 1/3 c parmesan cheese shredded
- 2 green onions chopped (optional for garnish)
- Preheat oven to 350
- Cut squash in half.
- Place cut side down in a baking dish filled with 1/2 inch of water.
- Microwave on high for about 8 minutes, or until tender. (Optional: bake cut side up in 350 degree oven until tender, about 50 minutes.)
- Remove and scrape out the strings with a fork being careful not to damage the shell.
- Place strings in a medium sized bowl.
- While squash is baking, cook ground meat in a pan until well browned.
- Add spaghetti sauce.
- Stir about 1 c of the spaghetti sauce into the squash.
- Layer in the boats with the the mozzarella and parmesan cheese.
- Garnish with chopped green onions (optional).
- Options: Add anything you might add to your favorite sauce, pizza or lasagna (green peppers, mushrooms, fresh tomatoes etc). Let the kids add what they prefer for their own boat. And most of all - have fun!

I love cooking with vegetables as the main ingredient. I have been playing around with zucchini slices and rolling them like lasagna noodles instead of actually using pasta. I have to improve it just a tad more… they tend to hold too much water. The other item I have been working on is also eggplant instead of pasta.
