The idea for a Sweet Potato, Egg and Bacon combination was given to me by my daughter. It’s is not only delicious, it’s also healthy and satisfying! To me, it’s right up there with comfort food!
It’s also very versatile! You can serve it for breakfast, lunch or dinner! And talk about easy! You really don’t need a recipe. But I’ll include one just to keep it simple.
And here are some Convenience Tips to make it even easier:
- Bake the sweet potato the night before.
- Use a large skillet to fry the bacon and eggs.
- Scoop the baked sweet potato into one side of the pan.
- Fry the egg and bacon on the other side.
- Now you only have one pan to wash!

- 1 large sweet potato baked
- 2 tsp butter or coconut oil
- 2 large eggs fried
- 1 Tbsp coconut oil
- 4 strips bacon (I prefer turkey)
- Bake sweet potato in oven or microwave.
- Mash sweet potato and stir in 2 teaspoons of butter or coconut oil. Divide onto two plates.
- Cook bacon according to package directions. Crumble into bite size pieces.
- Fry eggs in coconut oil. Season with salt and pepper. Place on top of sweet potato.
- Sprinkle bacon on top of egg and sweet potato.
- It's that easy! Enjoy!
- Hint: Leave yolk runny so it adds moisture to the dish.

Butter: may act as an anti-inflammatory, reduced risk of heart disease, improve immune system, aid brain development, and reduce blood pressure.
Coconut oil: may aid brain health, increase good cholesterol for heart health, lubricate joints, and burns body fat.
