  1. Line an 11 x 17 baking sheet with parchment paper or grease with additional coconut oil.
  2. Melt the 3 tablespoons of coconut oil in a pan on stovetop.
  3. Lightly cook garlic in coconut oil just to infuse the flavor (about 45 seconds).
  4. Toss the sweet potato fries in a bowl to coat them with the coconut oil and garlic.
  5. Place fries on the baking sheet in a single layer and bake 28 minutes.
  6. The last 5 minutes of baking, sprinkle the fries with the cilantro (or any other herb of your choice).
  7. Optional: top with freshly grated parmesan cheese.
