Sun dried tomatoes , feta cheese, and garlic are three of my favorite comfort foods. Mix in some healthy veggie pasta, topped with basil, and I’m ready to sit down, relax and enjoy.
The thing I love about this type of recipe is that you can include as much as you want of any of the ingredients. If you really crave sun dried tomatoes, add some more! I promise that the “recipe police” will not come looking for you. So have it your way!

- 1/2 box veggie pasta I use spinach and zucchini pasta
- 2 Tbsp olive oil
- 2 slices purple onion thinly sliced
- 2 cloves garlic chopped
- 1 c sun-dried tomatoes packed in oil
- 1/2 c feta cheese crumbled
- 1/4 c fresh basil chopped (optional)
- Boil pasta according to directions on the box and drain when done.
- When pasta is about 5 minutes from being done, add olive oil to a pan.
- Saute onion, garlic, and sun dried tomatoes about 2 minutes, or until onions are slightly tender.
- Add pasta to cooked vegetables and toss.
- Add basil and cook 1 minute..
- Toss in feta cheese and serve.
- It's that easy!
