Grilled cheese has always been one of my favorite sandwiches. It’s comfort food on a cold day, or really any kind of day. And considering how easy it is to make just adds to it’s likeability for me. Then, I tried it Mediterranean style, and it took on a whole new class of deliciousness all it’s own.
I also love it’s versatility. In other words, it’s not just about the cheese. Anything you can think of as Mediterranean can go into this sandwich. Or you can just keep it simple for a “go-to” evening when you feel like keeping things easy – but bursting with flavor.
- 2 slices bread (I like sprouted grain bread)
- 2 tsp butter
- 2-3 slices feta cheese
- 2 slices tomatoes
- 1 slice purpose onion
- 6 sprigs spinach
- Butter one side of both slices of bread
- Place one slice, butter side down, in pan.
- Layer with remaining ingredients. I like to sandwich the veggies in between the cheese slices so the cheese melts better.
- Top with the other slice of bread, butter side up.
- Brown on both side on low heat to give the cheese time to melt.
- Black olives and sweet peppers can be added for extra flavor.
God-given health benefits I enjoy from these ingredients:
Sprouted grains bread: sprouting grains makes the vitamins and minerals in the grain more digestible, may reduce inflammation, and is lower on the glycemic index than most grains, and is higher in fiber.
Feta cheese: protein for muscle health and may help prevent bone loss.
Spinach: super antioxidant which may aid in cancer prevention, blood glucose control, asthma prevention, regulate blood pressure, prevent anemia, and aid in eye health.
Onions: may improve immunity, fight infection, regulate blood sugar, reduce inflammation, fight allergies.
Tomatoes: may interfere with chemical unions needed to create carcinogens, aid in heart health, regulate fat in the blood.
