Browned Chicken Strips is one of those recipes that absolutely bursts with flavor every time you take a bite!
I could literally eat this dish as a regular every week. And, if you prefer, or for a switch up, you can just brown the chicken and serve the veggies on the side, or over the rice. Not to mention the fact that once you’ve made it you’ll realize how easy a visually appealing recipe can be to make. And if you know me, you know I like keeping it simple!
- 1 box rice pilaf cooked according to directions on package
- 2 tablespoons coconut oil extra virgin, cold pressed
- 2 large boneless chicken breasts cut into strips
- 1/4 c yellow onion chopped
- 2 garlic cloves chopped
- 12 oz. spinach uncooked
- 1/2 c sun-dried tomatoes packed in oil and chopped
- 1/3 c feta cheese crumbled
- Prepare rice according to directions on the box. I use Near East Rice Pilaf (original).
- While rice is cooking heat oil in a large pan.
- Brown chicken in oil with onions and garlic.
- Remove chicken from pan when browned.
- In the same pan saute spinach and sun-dried tomatoes until spinach is done.
- Return chicken to the pan.
- Add feta, cover and cook about 1 more minute.
- Drizzle with lemon juice (optional).
- Serve chicken mixture on top of the rice.
