This has become my absolute favorite chicken soup! And with all of it’s healthy nutrients, it’s not just for colds! You’ll be amazed when you read all of the heath properties of these ingredients!
Be sure to make a large batch for all of your family – and keep them healthy as God intended!
- 32 oz chicken broth (may substitute vegetable broth)
- 4 chicken breasts boneless, skinless cut into bite size pieces
- 1 c green onions chopped
- 1 1/12 tsp garlic clove minced
- 10 cherry tomatoes chopped
- 1 c black beans and corn mix (I buy this in the freezer section)
- 1/8 tsp cayenne pepper (you may substitute jalapenos or red pepper flakes)
- 1/2 tsp ground cumin
- 2 tsp salt
- 1 tsp black pepper
- 3 Tbsp lime juice (I use fresh squeezed)
- 1/3 c fresh cilanto chopped
- 3 avocados peeled and diced
- 1 c crispy corn tortilla strips (optional: from the produce or salad section)
- Boil chicken broth in a large pan.
- Add chicken and boil until cooked through - about 10 minutes.
- Add remaining ingredients: excluding lime juice, cilantro and avocado.
- Continue cooking about 20 minutes.
- Add lime juice and cook one more minute.
- Garnish individual servings with cilantro, avocado, and tortilla strips. (Do not garnish any soup you are freezing - just adjust the ingredients accordingly)
- Optional: Cook in a crock-pot for about 4 -5 hours on medium.

Black Beans: protein and fiber, aid digestion, regulate blood sugar.
Cumin: antioxidants, protects against memory loss, reduces blood glucose.
Cayenne Pepper: cleanses the body, anti-fungal, digestive aid.
Cilantro: cleanses the body of toxic metals, anti-anxiety benefits, antioxidant, high in vitamins A and K, fights diabetes
Avocados: help clear arteries by lowering bad cholesterol, acts as an antioxidant, block many carcinogens, healthy fat for the heart and brain
