Veggie tots are a delicious alternative to tater tots! They’re also much healthier and versatile because you can make them with your choice of vegetable! And did I mention they’re delicious?!
These veggie tots not only have a real crunch when you bite into them, but you can also use a variety of veggies. My favorite is broccoli (pictured) spinach or zucchini. Or, why not combine all three? You can also get creative and add a kick if you like by including some cayenne!
Want even more variety? Try backing them shaped like a pancake and top them with some extra cheese the last 2 minutes of baking.

- 4 cups broccoli florets, spinach, or zucchini finely chopped
- 1/2 cup yellow onion diced
- 2 eggs beaten
- 2/3 cup cheese, cheddar or parmesan shredded
- 2 cloves garlic
- 1 tsp salt (I use Himalayan Sea Salt)
- 1/2 tsp black pepper
- 1/2 c Panko bread crumbs
- Preheat oven to 400 and line a baking sheet with parchment paper.
- Blanch the broccoli for 1 minute. Drain and pat dry with a paper towel.
- (If using chopped spinach it will need to be precooked and drained. If using zucchini, you will need to grate it and squeeze all of the water out of it with a paper towel).
- Mix veggie of your choice with the next 6 ingredients.
- Add breadcrumbs last.
- Place the mixture in fridge for about 15 minutes to firm up.
- Roll into balls and place on baking sheet.
- Mist the tops with butter spray and bake for 10 minutes.
- Turn, spray again, and bake for another 10 minutes.
- Remove and season again with salt if needed. Or try a little seasoning salt.
