I love fajitas! But usually, they contain mostly meat a very few vegetables. With this recipe you’ll find a better balance filled with antioxidants and great taste! Serve with guacamole, sour cream, shredded cheddar cheese. and salsa. And if you want to simplify this recipes just use a frozen bell pepper mix as well as an all natural fajita seasoning.
- 1 lb skirt or flank steak tenderized and cut into strips
- 2 Tbsp olive oil
- 1 Tbsp lime juice preferably fresh squeezed
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 tsp garlic clove minced
- 1/8 tsp red pepper flakes optional
- 1/2 red bell pepper sliced into strips
- 1/2 yellow bell pepper sliced into strips
- 1/2 oragnge bell pepper sliced into strips
- 1/2 green pepper sliced into strips
- 10 cherry tomatoes cut in small pieces
- 1 small onion cut in half and sliced
- 1/4 c fresh cilantro chopped
- 4 tortillas preferrably whole wheat
- Preheat oven to 350 degrees.
- In a bowl, combine olive oil, lime juice, chili powder, cumin, red pepper flakes and minced garlic.
- Slice meat into thin strips and place in the bowl with the above mixture.
- While meat is marinating, prepare peppers, onion, cilantro, and tomatoes.
- In a pan cook meat slices on medium to high heat until tender, about 5 minutes.
- Add peppers, and onions, Continue to cook about 4 more minutes, (Do not overcook or peppers will lose their color.)
- Add cilantro and tomatoes and continue to cook about 1 more minute just to heat tomatoes.
- Place tortillas on an oven proof plate and cover with parchment paper or another plate. Heat in oven about 3 minutes.
- Divide meat mixture between the tortillas and roll up to serve.
