Is it a salad or is it a full meal? It’s both! And it’s as delicious as it looks. In fact, it tastes so good you’d almost think you should feel guilty for eating it. But you’ll be happy when you read all of it’s health benefits.
- 1 8 oz skirt steak
- 1 garlic clove
- salt and pepper
- 2 Tbsp olive oil
- 2 tsp honey
- 1 1/2 tsp red wine vinegar
- 2 tsp lime juice freshly squeezed
- 1/8 tsp cayenne pepper
- 1/8 tsp ground cumin
- salt and pepper
- 2 1/2 c mixed salad greens chopped
- 2 1/2 c roamain lettuce chopped
- 1 c frozen mexican vegetabes (includes corn, black beans and purple onions)
- 3/4 c crispy corn tortilla strips (usually in salad aisle)
- 1/2 c avocado chopped
- 1/4 c fresh cilantro chopped
- 8 cherry tomatoes quartered
- Whisk all ingredients together in a small bow, or pour into a jar and shake.
- Chop lettuce and place in a large bowl along with vegetables and onion.
- Reserve tortilla strips for assembly.
- Rub steak with garlic clove.
- Season with salt and pepper.
- Grill 4 minutes on both side.
- Slice.
- Pour salad dressing over salad greens and veggies.
- Layer skirt steak over greens.
- Top with tortilla strips.
