Aioli Sauce takes Quesadillas to a whole new level! It’s like a rich taste surprise with every bite!
If you open the Quesadillas, you’ll find healthy veggies tucked inside of the meat, adding the the healthy benefits of this recipe.
It’s a great way to get veggies inside the kiddos!
- 1 lb ground meat (I used ground turkey)
- 1/4 c taco seasoning (all natural preferred)
- 1/2 c water
- 2/3 c Mexican veggetable mix (corn, beans, onions, peppers)
- 1/4 c cherry tomatoes cut in fourths
- 1/4 c fresh cilantro chopped
- 3 - 4 whole wheat tortillas
- 3/4 c mayo or plain yogurt
- 2 medium garlic cloves minced
- 2 1/2 Tbsp lemon juice
- 3/4 tsp salt
- 1/2 tsp black pepper
- Mix all ingredients and set aside.
- Brown meat.
- Add water and taco seasoning. Cook until thickened.
- Add Mexican vegetable mix and continue cooking about 3 minutes or until vegetables are tender.
- Add cilantro and cheese and continue cooking about 1 more minute.
- Coat one side of tortilla with olive oil. Turn and scoop meat and vegetable mixture onto one half of the quesadilla.
- Add cheese and brown in a skillet, turning once.
- Repeat with other tortillas.
- Serve with aioli sauce and bite into tasty/hearty deliciousness!
- Note: Increase the veggies to increase the health benefits!
