Broccoli takes on a deep, rich flavor when roasted. Especially when it’s seasoned with garlic and topped with the smoky flavor of parmesan cheese! Convinces even the kiddos to like this healthy green vegetable.
One of the easiest ways to assemble a dish is to have all the ingredients gathered and prepped ahead of time!
Now all you have to do is mix, roast and enjoy!
- 1 large head of broccoli cut into florets
- 2 medium garlic cloves chopped
- 1 Tbsp olive oil
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tsp lemon zest
- 1 Tbsp lemon juice fresh squeezed preferred
- 3 Tbsp pine nuts toasted in a pan
- 1/3 c parmesan cheese shredded
- 1 Tbsp fresh basil chopped
- Preheat oven to 425 degrees.
- Place Florets in a bowl and sprinkle with garlic, olive oil, salt and pepper. Toss.
- Layer evenly onto a large cooking sheet (covered with parchment paper) and roast about 20-25 minutes.
- While broccoli is roasting, toast pine nuts in a pan.
- Juice lemon and prepare lemon zest.
- About 2 minutes before broccoli is done, sprinkle with pine nuts, lemon juice, lemon zest, parmesan cheese, and fresh basil (optional). Toss lightly with a spatula.
- Heat about 2 more minutes or until parmesan is slightly melted.
- Remove from oven.
