Eating fish twice a week is a necessity for living healthy, so I have come up with 4 fish recipes to help you do just that. One of them is Salmon patties. I love coating them with Panko bread crumbs, but when I want to add a little flare, I top them off with roasted red pepper sauce.
This is the same sauce that I use over Spiralized Veggies. I always make extra sauce so I have enough for another meal. Who doesn’t like convenience, right? We all need nights when cooking is simple!
- 10 oz salmon precooked
- 1/3 c red bell pepper chopped
- 1/4 c green onion chopped
- 1/4 c Greek yogurt (plain) or use mayo
- 1 Tbsp lemon juice preferably fresh squeezed
- 1 medium egg beaten
- 1/2 tsp garlic powder
- 1/8 tsp cayenne pepper
- 3 Tbsp coconut oil
- 1/4 tsp salt
- 2 Tbsp coconut oil
- 1/2 lg onion diced
- 3 lg garlic cloves minced
- 1 15oz jar roasted red peppers or roast your own
- 1/8-1/4 tsp cayenne pepper depending on your taste
- 2 Tbsp fresh basil finely chopped (optional)
- 4/3 c vegetable broth
- 1/3 c heavy cream
- 1/2 c parmesan cheese finely shredded
- Mix all ingredients for salmon patties together in a bowl (except coconut oil)
- Heat coconut oil in pan.
- Let salmon patties rest for about 10 minutes while they firm up. (While they are resting, make roasted red pepper sauce and let sauce warm while you cook the salmon patties.)
- Cook salmon patties in another pan on both sides until golden (about 4 minutes each side).
- Drizzle with roasted red pepper sauce.
- Melt 2 Tbsp coconut oil in a pan.
- Add onions and garlic to the pan.
- Cook about 4 minutes or until onions are soft.
- Add roasted red peppers and cook 2 more minutes.
- Add cayenne pepper and basil.
- Transfer to a blender, add vegetable broth and puree until creamy.
- Return to the pan and continue heating.
- Add cream (optional) and 1/2 c of parmesan to the sauce.

Sweet bell peppers: super antioxidants, may aid in cancer prevention, increase metabolism, decrease anxiety.
Onions: may improve immunity, fight infection, regulate blood sugar, reduce inflammation, fight allergies.
Cayenne pepper: may fight cancer, increases metabolism , regulate blood pressure.
