I am so glad I discovered Sweet Potato Fries! Now I can eat fries and feel good about it!
Actually, the only way I ever really enjoyed eating french fries was when they were super crispy and covered in Ketchup, with tons of salt. I simply didn’t think they had enough tasty goodness in them.
That is, until I was introduced to sweet potato fries! And I found a way to make the sweet potato fries even healthier. They’re probably the tastiest fries I’ve ever eaten (and do not require a ton of salt)!
Plus, they’re crispy – as well as healthy! Enjoy this yummy goodness with a sandwich, grilled meat, or just alone as a snack!
- 19 ounces sweet potato fries I used frozen Ore Ida Straight Fries
- 3 tablespoon coconut oil organic, extra virgin, cold pressed preferred
- 4 medium garlic cloves chopped
- 1/2 c fresh cilantro chopped
- Line an 11 x 17 baking sheet with parchment paper or grease with additional coconut oil.
- Melt the 3 tablespoons of coconut oil in a pan on stovetop.
- Lightly cook garlic in coconut oil just to infuse the flavor (about 45 seconds).
- Toss the sweet potato fries in a bowl to coat them with the coconut oil and garlic.
- Place fries on the baking sheet in a single layer and bake 28 minutes.
- The last 5 minutes of baking, sprinkle the fries with the cilantro (or any other herb of your choice).
- Optional: top with freshly grated parmesan cheese.
