I’ve never been a real fan of tuna salad sandwiches until I tried this recipe. I love the different textures and tastes. And knowing it has such great health benefits is a definite plus!
Whoever knew a sandwich could be so healthy for your brain! Be sure to check out the health benefits listed at the end of the recipe!
- 1 5 oz can of tuna packed in water, drained and patted dry
- 1 Tbsp yogurt (may substitute olive oil mayo)
- 1 Tbsp lemon juice from freshly squeezed lemon
- 2 Tbsp red bell pepper chopped
- 1 tsp purple onion chopped
- 2 Tbsp dill pickle relish drained of juice
- 8 sprigs spinach leaves
- 2 slices bread whole grain, toasted (or whole grain wrap)
- Drain and pat tuna dry.
- Place tuna in a bowl and add remaining ingredients, excluding spinach leaves and bread.
- Lightly toast bread in a toaster.
- Spread tuna mixture on sandwich along with spinach leaves.

Spinach: super antioxidant, cancer prevention, blood glucose control, asthma prevention, regulate blood pressure, prevent anemia, aids in eye health.
Whole grain bread (if gluten intolerant purchase gluten free): protect against heart disease, and diabetes, improve insulin sensitivity.
