Zucchini Pizza Boats are a new twist on vegetable pizza without all that crust, while still providing you with something to sink your teeth into. The best of all the worlds when it comes to dining deliciousness!

- 2 med zucchini cut in half lengthwise
- 2 tsp olive oil extra virgin
- 1 lg garlic clove finely minced
- 1/4 c green pepper chopped
- 1/4 c mushrooms chopped
- 1/4 c green onion chopped
- 10 turkey pepperoni slices cut in quarters
- 1 tsp italian seasoning
- salt and pepper
- 2 fresh basil leaves julienned (optional)
- 1/2 c spaghetti sauce bottled preferred, with no high fructose corn syrup
- 1/2 c mozzarella cheese shredded, more if desired
- freshly grated parmesan (optional)
- Preheat oven to 400 degrees F.
- Cut zucchini in half lengthwise.
- Place on baking sheet.
- Season with salt and pepper
- Saute garlic, green pepper, mushrooms, green onion, pepperoni slices in olive oil. Season with Italian seasoning, salt and pepper.
- Add fresh basil last 30 seconds of cooking.
- Brush spaghetti sauce onto zucchini slices.
- Top with sauted veggies.
- Top with mozzarella cheese.
- Bake 12 to 18 minutes, or until golden.
- Sprinkle with freshly grated parmesan if desired.
- Serve with salad.
