I’ll admit it right up front that this taco salad takes a little more prep than most taco salads, but it’s a one dish meal that makes it worth the effort. After all, you don’t have to make anything else. Serve with some healthy chips and you’ve got a great, satisfying meal!
You’ll notice it calls for guacamole, salsa, and aioli sauce. All of these recipes can be found on my site. Of course, if you want to keep it easy, you can use the store bought. But after using the fresh home made, you just might be spoiled enough with the taste to make your own. (especially the aioli!)
As for the taco meat, I always make extra when we’re having tacos or enchiladas and freeze some for taco salad. It makes life very convenient!
In fact, I keep all of these ingredients on hand nearly all of the time and have this salad regularly. I have never gotten tired of it and it’s definitely very filling!
- 2 cups lettuce (I prefer mixed greens and romaine)
- 1/3 c mixed mexican vegetables (corn, black beans, onion, and peppers
- 6 cherry tomatoes chopped or cut in half
- 1/2 c taco meat
- 1 tsp green onion chopped
- 1 tbsp fresh cilantro chopped
- aioli sauce to taste (on my website)
- guacamole to taste (on my website)
- salsa to taste (on my website)
- Mix all ingredients together in a bowl.
- Top with guacamole, salsa, and aioli sauce of your choice. (You will most likely not find aioli sauce in the store, but it's easy to make at home)
- Stir (no dressing needed).
Salad greens: may protect the heart, eyesight, fight cancer and diabetes, and aid bone health.
Mixed Mexican Vegetables: contains antioxidants, fiber for digestion, and may aid eye health, contain protein and fiber, may aid in digestion and regulate blood sugar, may improve immunity, fight infection, regulate blood sugar, reduce inflammation, fight allergies, possible cancer prevention, increase metabolism, and decrease anxiety.
Tomatoes: may interfere with chemical unions needed to create carcinogens, aid in heart health, regulate fat in the blood.
Taco Seasoning (all natural): contains antioxidant which may protect against memory loss, reduce blood glucose, cleanse the body, and act as an anti-fungal and digestive aid.

Cilantro: contains antioxidants, cleanses the body of toxic metals, may contain anti-anxiety benefits, is high in vitamins A and K, and may fight diabetes.
